There are only six moments featuring Ganondorf (in some form) in The Legend of Zelda: Ocarina of Time, one of which has Ganondorf against a white background, which wouldn't be suitable for a physical model. While we wait for further details or confirmation of the new rumour, here's a look at the major Ganondorf scenes in The Legend of Zelda: Ocarina of Time. Through the window

The first time Link sees Ganondorf in Ocarina of Time is through a window at Hyrule Castle shortly after meeting a young Princess Zelda. In this moment, Ganondorf is kneeling with a pair of guards in the background. It's not the most exciting moment in the game, and the surroundings of the scene are fairly bland.
The first meeting

The first proper meeting between Link and Ganondorf in Ocarina of Time is when Ganondorf is chasing down Princess Zelda on his giant black horse, with Hyrule Castle in the background. The camera angle serves to make Ganondorf seem even bigger than he is, with an intimidating presence. Though it's not exactly a boss fight, the scene itself is memorable, but bears a striking resemblance to his next appearance.
Phantom Ganon

Before transforming into Phantom Ganon, Link meets a dark spirit that takes on the form of Ganondorf in the Forest Temple. This is the first boss fight against any form of Ganon, and the cutscene preceding the battle adopts the low camera angle again. However, this time Link has grown up and gained some legendary equipment. The paintings surrounding the room add an ominous touch to the scene, and it's another uncommon appearance of Ganondorf's horse (or a spirit resembling it).
Great King of Evil Ganondorf

The first phase of the final battle in Ocarina of Time is practically begging for a LEGO diorama, though one that would be complex in design. Ganondorf stands beside an ominous pipe organ as Princess Zelda is trapped in a crystal up above. It's a grand scene that serves as the introduction to one of the most memorable fights in The Legend of Zelda franchise.
Mingles proposed a recreation of this scene for a LEGO Idas set in 2011, and while it was not picked for a model back then, their build demonstrates the potential this moment holds for a physical build.

Final Boss: Ganon

The actual final boss of The Legend of Zelda: Ocarina of Time sees Ganondorf embrace his beastly side and transform into Ganon itself. It's a moment from the franchise that has been proposed for a set before on LEGO Ideas by Ragaru. While it didn't reach 10,000 supporters in time to be considered for a set, their recreation of Ganon offers an idea of how this fight can be transformed into a LEGO scene.
