Thankfully, you can amend the colour scheme of the new LEGO Dune set with a literal handful of pieces, as demonstrated in a new video by RacingBrick. It's easy to switch these parts out too without having to dismantle the entirety of the model.

The video showcases what steps you need to take and what parts you need to purchase as replacements. These include black Technic axles and pins with a ball joint on the end as well as a few other miscellaneous black Technic elements for the full effect.
These replace identical parts mostly on the wings of the model. Axles can be pushed out of position with their replacements and pins can be similarly pushed out without damaging the structure of the model.
The process gets more complicated towards the back as you'll need to remove some of the side panels and be careful as you push pieces in an awkward but necessary way.
At a distance, it's not easy to spot the change but upon closer inspection, removing the bright colours greatly improves the appearance of the set. It's a considerable upgrade for not too much extra on top of the £149.99 / $164.99 / €164.99 you'll need for the Dune model. At the time of writing, ordering the elements on Pick a Brick would cost £5.30 / $6.63 / €6.14.
Those ordering the required parts through Pick a Brick may want to keep in mind a few changes recently made to the service, though they shouldn't affect bestseller elements and that's the entirety of the upgrade's pieces.
