With this criterion in mind, we're revisiting our previous list of LEGO Pixar 18+ set ideas to see how this path might shape any future 18+ LEGO Pixar models, of which none are currently confirmed. This does not include anything for Cars, which is rumoured to be subject to something unexpected next year.
Monsters Inc.

Unlike our previous suggestion inspired by HollyOnFilm's diorama collection, another collection of figures may be more suitable for a LEGO Monsters Inc. 18+ model, similar to
Luca

Luca is a more recent movie in Pixar's catalogue, but it has some major potential for LEGO figures. The two main characters are sea monster that an disguise themselves as humans when they are dry, and this concept would be perfect for LEGO figures that depict both of their forms, just like teo10_05 has proposed on LEGO Ideas.

That said, it would be a shame not to get any Luca minifigures at some point, to display perfectly within the new
Ratatouille

While the LEGO community consistently proposes recreations of Gusteau's restaurant and kitchen with Ratatouille minifigures, the current direction for 18+ LEGO Pixar sets focuses on buildable characters, and this criterion would allow a LEGO Ratatouille model to focus better on the film's main character.
As a rat, Remy would be much smaller than a minifigure in a playset, but as a buildable figure, he could be any size. The merchandise for the Ratatouille ride at Walt Disney World even includes a figure of Remy that pops out of a chef's hat. Such a concept is something that the LEGO Group would be able to adapt, but likely not as anything wearable.
The Incredibles

The LEGO Group isn't averse to The Incredibles minifigures, releasing some for the second film across a series of sets, but assuming that LEGO Pixar 18+ builds will follow in the buildable character direction, the superhero family can be adapted into a range of models, too.
Philippe Moisan has explored how the animated proportions of each character can be recreated as a buildable LEGO figure. Featuring the full family as figures in a set similar to the character selection in
Toy Story

LEGO Disney is rife with Toy Story minifigures, but the early days of LEGO Toy Story briefly explored buildable figures, including 7592 Construct-a-Buzz. These days are long since over, but the current direction of the 18+ LEGO Pixar sets is perfect for their return.
A remake of 7592 Construct-a-Buzz, focusing on recreating the toy character as closely as possible, is an ideal subject for a larger LEGO character recreation, and a new sound brick with lines from the movies is a relatively easy addition that would increase its value and appeal.
